Dolceacqua Superiore DOC Poggio Pini

A ruby-red wine with dense, difficultly precipitated arches. On the nose, it is spicy, fruity and toasty. Elegance is the greatest characteristic of this Rossese; the aromas are very intense and easy to distinguish such as blackberries, wild berries (‘merelli’ dialect term), mulberry, raisin rose, tobacco and white pepper.

On the palate, softness, glycerine and alcohol predominate, supported, however, by a good freshness and discreteness and savouriness, with a characteristic bitter aftertaste, all tied together in a pleasant harmonious thread.

This wine of excellent structure and balance is distinguished by its intensity and persistence. In evolution with an ageing of 10 years.

VINE: 100% Rossese. SOIL TYPE: Shale – clay – limestone. PAIRINGS: Game, red meats, lamb, typical cuisine, cheeses. AVERAGE PLANTING DENSITY: 5000 vines per hectare. ORIGIN: Vineyards located in Località ‘Pini’ in the municipality of Soldano, obtained from plants planted in 1888. EXPOSURE: Situated on the hill of the same name, ‘Pini’ comes from a vineyard of 18,000 square metres with south-eastern exposure. Only grapes from the oldest vineyard, planted in 1888, are chosen for vinification. Exposed in strips with slopes of up to 70%, it is subjected to the influence of the sea winds that contribute to accentuating the characteristic fragrances of Liguria, together with the Mediterranean maquis by which the vineyards are surrounded. VINIFICATION: Part of the initial grapes are not destemmed, in percentages that can vary depending on the vintage from 50% to 60%. Fermentation on the skins for about 12/15 days at a constant temperature of 26°/28°C. AGING: 12 months in steel vats and 8 months in bottle. CULTIVATION NOTES: cultivation in strips using the alberello system.
