Dolceacqua Superiore DOC Fulavin

Brilliant ruby when young and tending to garnet in ageing, it has fruity hints of cherry, currant, wisteria and fresh violet with hints of iodine. In the mouth, it is balanced with a dense tannic texture. It is intense and persistent with a dry and slightly spicy finish.

VINE: 100% Rossese. TYPE OF SOIL: Shale – clay – limestone. PAIRINGS: Game, red meat, lamb, typical cuisine, cheese. AVERAGE PLANTING DENSITY: 6000 vines per hectare. ORIGIN: Vineyards located in the Fulavin locality in Soldano. EXPOSURE: Situated on the hill above the village of Soldano, it originates from a 7000 m2 vineyard with south/east exposure. VINIFICATION: A part of the initial grapes is not destemmed, in percentages that can vary, depending on the year, from 50% to 60%. Fermentation on the skins for about 12/15 days at a constant temperature of 26°/28°C. AGING: Four months in steel vats and eight months in acacia tonneaux, followed by three months of bottle ageing. CULTIVATION NOTES: Banded cultivation with sapling system.
