Dolceacqua Superiore DOC

Brilliant ruby red in colour, the nose is dominated by fruity notes of cassis and wild strawberries.

It is warm in the mouth. Perfectly corresponding to the nose, with good acidity, balanced.

Evolving with an ideal ageing of about 7/8 years.

VINE: 100% Rossese. SOIL TYPE: Clayey – calcareous. PAIRINGS: Game, red meats, lamb, typical cuisine, fatty fish dishes. AVERAGE PLANTING DENSITY: 6000 vines per hectare. ORIGIN: Vineyards located in Poggio Pini in Soldano and Vigneto Luvaira in San Biagio della Cima, obtained from the youngest vines, with a wine blend of the two Cru Poggio Pini and Luvaira. EXPOSURE: Vineyards with south/east exposure in Soldano and total exposure in San Biagio dalla Cima. VINIFICATION: Part of the initial grapes are destemmed, in percentages that can vary depending on the vintage from 20% to 30%; fermentation on the skins for about 12/15 days at a constant temperature of 26°/28°C. AGING: 11 months in steel vats and a minimum of three months in bottle. CULTIVATION NOTES: Cultivated in strips using the alberello system.
